    Generally, it’s not recommended to harvest honey during the winter as bees rely on their honey stores for food. Harvesting during the winter can deplete the hive’s reserves, leaving the bees vulnerable. The best time to harvest honey is in late summer or early fall, after the bees have finished their foraging and honey production for the season.
